SOMLYAY Founder and Chief Vinnovation Officer, Erik Segelbaum, has a proven track record of success. This includes creating and running highly profitable, award winning and operationally efficient beverage programs, effective staff and management training, revenue generating strategies, profitability maximization and more.

Erik is an Advanced Sommelier with the Court of Master Sommeliers, Certified Specialist of Wine with the Society of Wine Educators, Wine and Spirits Locations Specialist (With Distinction) for Port and Champagne. Erik has worked for nearly three decades in restaurants and hotels, (back and front of house). Erik has opened more than 2 dozen restaurants and hotels including building, implementing, executing and training of beverage programs. His experience set includes everything from Michelin Star fine dining to upscale casual to multi-unit concepts.

Erik’s most recent experience includes 5 years as the Wine/Beverage Director for Starr Restaurants where he oversaw beverage operations in excess of $100 million for 39 restaurants in 7 cities, 10 months as Head Sommelier of The World, luxury residences at sea, and 5 years as Corporate Wine Director for Schwartz Brothers Restaurants in Seattle, Washington.

As the Founder and Chief Vinnovation Officer of SOMLYAY LLC, a full-service hospitality consulting company located in Washington, D.C., Erik currently offers a variety of services for every segment of the industry: on-premise, supply-side and private consumer. Services range from profitability and revenue guidance, improving business operations, private events, education, training, wine sourcing, valuation, liquidation and more to individuals and companies of all sizes.
