Ludovic was born in Paris, but grew up among his family vineyards in Champagne. After completing a degree at culinary school, he continued his wine studies as an apprentice at Lucas Carton under chef Alain Senderens, three star Michelin in Paris.
Ludovic also had the opportunity to work in Spain with Ferran Adriá at “La Terraza del Casino de Madrid” a two starred Michelin restaurant in Madrid, which helped develop his understanding of the importance of texture in wine and food pairings. He further profited from his time in the Iberian peninsula by spending most of his time off in the Douro Valley or in vineyards around Spain including Rioja, Ribera del Duero, Priorato, Jerez de la Frontera and Bierzo.
Furthermore, an opportunity emerged at the restaurant La Lorraine in Luxembourg, a restaurant ,member of the C.D.C. (Corps Diplomatique et Consulaire) where Ludovic became the executive sommelier, overseeing a team of 8 sommeliers, a wine program of more than 2500 references and an inventory of 12 000 bottles.
After 3 years at the Court, Ludovic then move to the USA, at Paul Bocuse Restaurant in Orlando Florida as Pavillion Manager in EPCOT center, Disney World.Ludovic met his now wife Fabiola, who is from Mexico and, after a vineyard trip of 6 months around Europe together, they decide to settle in Mexico, Playa del Carmen, where Ludovic became corporate sommelier at Karisma Hotels and resorts, overseing the beverage program of all 5 properties of the company,a total of 12 restaurants, all winner of the Wine Spectator Award of Excelence, the first time it ever happened in the state of Quintana Roo.
Afterwards, Mexico´s biggest fine wine importation company, Vinoteca, hired Ludovic as corporate sommelier, a position he held for 3 years then Vinoteca promoted Ludovic to the position of Developpement National manager.In 2012,
Ludovic, in a will of being independent opened Cru, The Little Wine Bistro, Monterrey´s only wine restaurant and in April of 2013, joined as a partner, Vinos de Culto, a fine wine importator, where he is in charge of the wines of France and Italy.
